Say what? Chicken butt.

What's that? Chicken fat.


And here is the final roasted fowl from yesterday. Complete with yummy roasted potatoes.

 
 
They're from my phone, so not so sharp or good quality. I have the nice camera but I'm lazy enough that I went for the phone. Still haven't picked apart the rest of the leftovers and made burrito filling yet, but will probably do that tomorrow. Will let you know how it goes!

I think that fat is also called schmaltz - and is used for all kinds of things.

Once you've finished your dining, you can throw the rest of the carcass into the crock pot; add a bit of water and a can of green chili enchilada sauce and cook the hell out of it. The meat will fall off the bones, will be absolutely perfect for shredded chicken... anything. Makes burritos, enchiladas, tacos, stir fry... wonderful stuff. And, IMHO, the only reason one cooks a whole chicken is for the left overs.

p.s. throw some garlic and onion, cumin, salt & pepper into that crock pot. I keep forgetting that my 'standard' isn't obvious to others...
